Instructions
- Dry the Chicken Wings: Use paper towels to pat the wings dry. This helps them cook better, especially if you sear them first.
- Sear the Wings (Optional): Turn on the sauté function on your Instant Pot. Add 1 tablespoon of oil and brown the wings in batches for about 2 minutes per side. You can skip this step if you’re short on time.
- Add the Ingredients: In the Instant Pot, mix the soy sauce, vinegar, garlic, bay leaves, peppercorns, ground pepper, brown sugar, and water (or broth). Stir everything, then add the chicken wings. Make sure they’re coated well in the sauce.
- Cook the Wings: Put the lid on your Instant Pot and set the valve to "Sealing." Cook on high pressure for 10 minutes. When it’s done, let the pressure release naturally for 5-10 minutes, then do a quick release.
- Thicken the Sauce: Switch the Instant Pot back to the sauté setting. Take the wings out and set them aside. Let the sauce simmer for about 5-10 minutes until it thickens a bit. Stir it occasionally and taste to see if you need more seasoning.
- Finish and Serve: Put the wings back into the pot and toss them in the sauce until they’re fully coated. Sprinkle green onions and sesame seeds on top if you like. Serve and enjoy!
Tips for Success
- Boost the Flavor: If you have time, marinate the wings in the soy sauce, vinegar, garlic, and spices for 30 minutes to an hour before cooking.
- Add Some Heat: Want it spicy? Add sliced chilies or a pinch of chili flakes to the sauce.
- Make Them Crispy: After cooking, pop the wings under the broiler for 3-5 minutes for a crispy finish.
What to Serve with Chicken Adobo Wings
These wings are perfect with steamed jasmine rice to soak up the sauce. For a more complete meal, add a side of sautéed vegetables or a simple salad.
Storage and Reheating
- Keep Leftovers: Store leftover wings in a sealed container in the fridge for up to 3 days.
- Reheat Easily: Warm them in the microwave or sauté them in a pan with a little water to freshen up the sauce.
